Tostada Tuesday!

This Texas Girl has a big heart for Taco Tuesday! But since my move to Michigan I haven't had very many opportunities to enjoy a yummy taco tuesday. So today I made some tostada's at home using some cheap and somewhat healthy ingredients. It's a very simple meal and is so yummy! 

All you need is, 

  • Corn Tortilla 
  • Olive Oil
  • Tomato (I use 2 or 3 grape tomatoes)
  • Onion  (I use about 1/4 to make 4 tostadas)
  • Kale ( a hand full, it shrinks when it cooks)
  • Brussels Sprouts (only 2 or 3)
  • Tuna (I buy the tuna in the bag) 
  • Garlic clove 
  • Refried beans
  • Seasoning (salt, peper, chili peper) 

First, fry the corn tortilla's in the olive oil so they get nice and crunchy! Then in a microwave safe dish heat up the refried beans, I always add water to make them more smooth.

Next, chop up all of the fresh veggies and toss them into a hot pan with some oil! Add the tuna and seasonings and let all of the flavors combine! 

After only a few minutes you are all done! Take your tortilla, and spread the beans on top, then add a scoop of your delicious tuna and veggies. I usually add some salsa and my husband always asks for sour cream too.  

It's so simple, and I am amazed that the kale and tuna taste good on the tostada! I am a girl who refused to eat tuna until a few months ago I learned its really cheap and actually kinda good! I can't even taste the tuna in this yummy meal! 

You can easily invite your friends over and ask them to each bring an ingredient or two. Cook up a yummy tostada dinner and hang out! Its very inexpensive and it's also fun to try new things!
