Cooking on the Cheap: Quick Breakfast Taco

 

Breakfast is the most important meal of the day. I don't eat breakfast. I know, that makes me a failure. But for those of you that do eat and enjoy breakfast, here's a cheap, healthy meal you can cook for yourself in just 15 minutes, courtesy of Eatingwell.com.
 
 
Ingredients:
 
2 corn tortillas
1 tablespoon salsa
2 tablespoons shredded reduced-fat Cheddar cheese
1/2 cup liquid egg substitute*
 
*This is per the recipe; I say just make some good old-fashioned scrambled eggs.
 
Preparation:
 
1) Top tortillas with salsa and cheese. Heat in the microwave until the cheese is melted, about 30 seconds.
 
2) Meanwhile coat a small nonstick skillet with cooking spray. Heat over medium heat, add egg substitute and cook, stirring, until the eggs are cooked through, about 90 seconds. Divide the scrambled egg between the tacos. (Or scramble an egg or two and divide it between the tacos.)
