Have you ever lived in a dorm? Or in your parents house with next to no cooking skills? Or lived in a house while possessing excellent culinary skills but just felt extremely lazy and didn't feel like cooking?
The first two apply to me, but meeting any of the above criteria means you've likely found yourself in need of a cheap, quick, yet filling meal. Never fear, my friends! Culinary Challenged Girl is here!
I found this recipe for Microwave Mexican Pizza from Food.com. The best part is that it's actually pretty healthy -- at least healthier than ramen noodles and Diet Coke, which is what I may or may not have lived on for an undisclosed period of time.

2 fat free tortillas
1/4 cup low fat mozzarella
1/4 cup low-fat cheddar cheese
1/2 cup salsa
2 tablespoons low-fat sour cream
1) Lay out one tortilla, and spread evenly with cheese.
2) Microwave for 30 sec and place second tortilla over the first.
3) Microvave again for 40 seconds.
4) Mix sour cream and salsa and spread over top.
5) Cut and eat.
Another cool thing about this recipe is that you can modify it to your taste. If you have leftover chicken or beef that's already been cooked, you can layer it between the tortillas, or add things like refried beans and hot sauce (which is what I would do, because hot sauce belongs on everything.)
